Family business brings Walailuk abroad to CQUni

CQUni Hospitality student Walailuk Kullikhitkusol mixes up a Purple Sunset mocktail under the watchful eye of Teacher Nicole Middleton.

Being tipped $24 by happy customers who said they’d definitely return made CQUni Mackay Hospitality student Walailuk Kullikhitkusol’s year.

Walailuk is studying an 18-month Diploma of Hospitality (Management) with CQUni and working at Hogs Breath Cafe.

“This is my first time in Australia, it’s my first job as a waitress and that was my first tip,” Walailuk said.

Keen to travel, Walailuk came from Thailand to Australia this year with a view to one day working in her aunty’s Thai takeaway store in Dysart.

“I’m learning so many things – how to be a good leader, how to manage a restaurant and it’s helping me with my English,” she said.

“I get to meet a lot of people in my job and the customers in Mackay are really nice.”

“I have the most fun making drinks like mocktails and cocktails.”

Teacher Nicole Middleton said CQUni’s Hospitality courses were so popular amongst employers, that students were “getting snapped up left, right and centre”.

“We encourage our students to undertake work experience as part of our courses; I even help with their resumes and applications. Often this leads to a traineeship and/or employment which is great,” she said.

“We also engage our students in festivals like the Beach Horse Races and events such as Eat Street at Harrup Park to give them real-life hands-on experience and of course they all work weekly in our Fifth Floor Training Restaurant.

“In the Diploma course, students learn front-of-house duties, the arts of food and beverage pairing and fine dining, how to upsell, and bar operations – in the end, they’ll have mastered eight types of mocktails and 20 cocktails and have a good understanding of spirits, liqueurs, ports and wines.”

CQUni Mackay’s Fifth Floor Training Restaurant (building 1) is open on Wednesdays until 23 August from noon to 1pm.

Purple Sunset

Glass: Colada Glass

Ingredients:

> 15mL Monin blue curacao syrup

> 15mL Monin triple sec syrup

> 60mL Pineapple juice

> 60mL Orange juice

> 60mL Lemonade

> 15mL grenadine or raspberry cordial

> 1 scoop of ice

Method:

  1. Place ice into the glass and top it with Monin blue curacao syrup and Monin triple sec syrup.
  2. Fill up two-thirds of the glass with pineapple juice and top with lemonade.
  3. Add small dash of grenadine or raspberry cordial to make the drink purple.
  4. Garnish with a cherry on the side of the glass, a paper peacock decoration and a long black straw.
